Deep-steamed (fukamushi) tea is made by steaming tea leaves for about twice as long as regular sencha. The tea leaves become crumbly, making it easier for various components to come out, and it is characterized by a deep color and rich flavor. It has a strong umami and bitterness. The umami is of a higher quality than regular sencha.
